How to get specific data in templates

Hi

I'm new to Magento, so my questions can be simple, but I couldn't find the answer.

1. How to get brand name in list.phtml?
2. How to turn off cache? I turned it off in system - cache management, for all the lines on that page, but anyway after I change say list.phtml, I have to go to another category page - the one I was just watching stays the same (both html and php parts).
