I have done this with other CMS (Joomla).
Does anybody know how to organize the CMS pages into categories and then have a Category page that shows the intros of all the CMS pages in that category?

You can use blog extension for magento what support category for blog and then use some kind of extend menu like mega menu http://www.magentocommerce.com/magen...mageworld.html to build the menu structure.
